What you described requires some custom CSS code or a PHP code snippet indeed. Both are outside of the scope of our support.

I’ve tested the Hand-picked Products Block on two separate test sites of mine and it correctly listed the actual products I have on each site.
So this kind of problem is usually caused by either a conflict with your theme or with another plugin. I know you did some troubleshooting, but if you could do more it’ll likely reveal the culprit.

The best way to determine this is to:- Temporarily switch your theme to Storefront
- Disable all plugins except for WooCommerce (version 4.9) and WooCommerce Product Blocks (version 4.2)
- Repeat the action that is causing the problem
If you’re not seeing the same problem after completing the conflict test, then you know the problem was with the plugins and/or theme you deactivated. To figure out which plugin is causing the problem, reactivate your other plugins one by one, testing after each, until you find the one causing conflict. You can find a more detailed explanation on how to do a conflict test here.
Let us know the outcome of the above troubleshooting so we can assist you further if needed. If that is the case, could you please share a copy of your site’s System Status? You can find it via WooCommerce > Status. Select “Get system report” and then “Copy for support”.? Once you’ve done that, paste it here in your response.

What you’ve described has already been reported as an enhancement to the Checkout Block:

You can follow the progress yourself there.
The developer reports are typically addressed on severity, so an immediate fix is unlikely. It will likely take some time to address this particular issue, which unfortunately I don’t have an exact timeframe on. Also, not all reports will be addressed because it depends on the severity of the bug and how many sites are affected.

You’ve correctly discovered that the core payment gateways are already supported by WooCommerce Checkout Block. However, some others are not yet supported.
There is already an idea submitted for this on our Ideas Board. I encourage you to vote on it there as that is where developers go to look for future plugin features and improvements.
So in the meanwhile, feel free to use WooCommerce Checkout shortcode.
