This has now been resolved.
If anyone’s having a similar issue, the problem was with the “Google Consent Mode” not being active in the plugin. All I had to do was to tick the box in the “Consent Management” section of the plugin to resolve this.

I wouldn’t know if cookie banners somehow affect the conversion tracking, however I’m not getting any conversions at all right now, so it must be something else.
I do use WP Rocket caching plugin, but I doubt it’s causing any issues, because I’ve been using it for more than a year, so the settings must be ok, as I haven’t changed the defaults.
I do not use any minification plugins and users blocking Javascript or cookies are probably in the minority of the traffic, so you’d expect some conversions not to be reported, but nothing’s being recorded at the moment. Haven’t activated the “Consent Mode” in the plugin.
I’ve decided to create a new conversion on Google Ads and add the new purchase conversion label to Pixel Manager in WordPress – let’s see if it makes any difference.
Any other suggestions?

I managed to resolve the issue by contacting the theme developer, as the product sales count feature was part of the theme and it was not functioning correctly.
Unfortunately, we had to remove it completely to solve the problem, but this has addressed my concerns, so it’s all good.

I believe you’re right with the fact that the 2nd line that shows “Already sold” items is NOT related to WooCommerce. There’s probably a plugin or some built-in feature in the theme that’s causing it.
The stock management side of things works perfectly fine with WooCommerce, so I will see if I can do conflict testing and also contact the theme developer to see what they say.

In reply to: [WooCommerce] Deleted Completed Orders – How To Update Product Stock QuantityThe checkout process and the functionality of the website is not affected by this error – it seems to be only a display issue for sold items.
The line that says “Sold Out” normally displays the number of items sold, such as here > https://i.ibb.co/GHQnmPm/stock1.png
If I put stock quantity as “1”, then it shows the correct quantity available, but I believe it shows “Sold Out” at the same time, because WooCommerce thinks I’m out of stock due to a previous sale.
Please note, “Sold Out” and “Out of Stock” are 2 different lines. The “Add To Basket” option is available when the item quantity is at least 1, however if the stock is 0, then you can no longer add the item to the basket and the message displayed is “Out of Stock”.

I’m 99% sure that this issue is caused by my completed/deleted test orders, but I can’t figure out how to solve this.

The problem is that I deleted those completed test orders and then permanently removed them from the trash as well, so I can no longer see them on the WooCommerce dashboard, meaning I cannot change the order status.
However, because those orders were completed, WooCommerce still counts it as a sale in the inventory.
Yes, I can try to increase the stock quantity from the inventory of the product, but the problem is that WooCommerce thinks that I’m “out of stock”, when I still have 1 item remaining.

Do I have any other options apart from refunding all test orders?

I’ve got MobiMax theme installed and I believe this feature is included in the theme.
