In my theme directory there is Graphene (which I am currently using), Magnificent and TwentyTen.

I havent modified TwentyTen at all, but graphene has been edited.

I cant get my current theme to change to either of them.

Just to clarify.

1. downlaod the twenty eleven theme
2. upload to themes folder.
3. change name of which folder?

I made a new SQL user for the database and I have changed the part in wp-config file which sits in the wordpress file directory to have the same info:

/** MySQL database username */
define(‘DB_USER’, ‘admin’);

/** MySQL database password */
define(‘DB_PASSWORD’, ‘***’);

What do you mean by making sure database host is correct based off your hosts setup?

Do you have a recent backup?

Did you change anything recently that may have broken the site?

Did you check with your hosting provider incase its a problem on their end?
