To clarify, WP Simple SEO outputs og:image tags, there is just no customization for it.
If customization is needed, disabling the Social section of the Plugin settings and using other options will give you the functionality you require, whether that’s paid addons or alternate, free plugins for social metadata. This is the route a minority of users happily take, whilst continuing to use WP Simple SEO.

Adding
remove_filter('wp_title', 'expositio_wp_title');
to your own Plugin snippet will resolve and ensure this persists across Theme updates.Forum: Plugins

Alternatively, feel free to disable the Theme’s filter that alters the Title programmatically:
remove_filter('wp_title', 'expositio_wp_title');

In WP Simple SEO > Meta > Post Types, change the Title to:
{post_title} |
Expositio will automatically append the site title to the end of this, which resolves the double site title.

To workaround, please ensure you only paste the value in the
content="value"
section of the tag supplied by Bing.1.0.2 will detect this and correctly output the verification tag.
