It worked by removing the form element, saving the contact form then clicking the minus sign and saving the contact form again.

thanks for the update, I installed it and adding an extra taxonomy works as expected. Removing an taxonomy was a bit less intuitive. I needed to remove the cf7 form element before I was able to remove the taxonomy.

I found a way to get it working. The field in the wordpress Db ‘_cf7_2_post-taxonomy’ contained just one entry (the last). When I manually added more taxonomies (unserialize array, add the other taxonomies and reserialized the array again) to the field the form worked as expected and in the admin page the mutliple taxonomies where visible.
I suspect that when the contact form is saved the loop overwrite the previous entries that where either in the field or each saved taxonomy with the latest. I would need to invest more time to find out where exactly this happens but maybe you can fix this very quickly.
