например, я знаю что в редактирование категорий можно добавить дополнительные поля кодом в теме или с помощью плагина Advanced-Custom-Fields

и в этих дополнительных полях теоретически можно вывести все имеющиеся атрибуты чтобы выбрать галками нужные из них.

правда потом надо будет написать свой виджет, который по id текущей категории будет делать запрос к БД, чтобы по дополнительному полю категории получать все связанные атрибуты, а на их основе генерировать фильтры для товаров текущей категории.

сам я это не смогу написать. но я удивлён что такого готового нет.
