EDIT: I’ve found this shortcode for first part of my question: [substr({initial_registration[1]},"0","-12")]
With this code I have a perfect 2016-03 text in my post content.
Now it would be perfect for me to find a way to turn it into 03-2016.
Is there a way to do everything with a shortcode or do I have to insert a function in the prepared editor?

I’m using custom post type too but. I created an unique contact form to be populated with the email address of the owner of the B&B.
But I can not see the value of the email page.

In my page the value is drawn from the $options instead of $post. It’s this the problem? How do I view this field? Thx in advance

1) download active theme files in your computer.

2) search the file containts: jquery-1.6.3.min.js with Notepad++

3) open the search file and replace:

Which theme for WP have you installated?

With 1.3.1 It’s all OK

Unfortunately it doesn’t work. Change suggested from @jstride it’s ok and now plugin does not generate the error but the post does not come created from 3 days although the blog of reference they are dawned.
Some plugin in alternative o someone that use this without problems?
