You need to create a style before.

You mean the text below the countdown (check for class: .countdown_txt)? Is no text above.

I think you can combine with another plugin to show/hide content on the page where you include the countdown. Search for this plugin: Show/Hide Content at Set Time

When you create a new style you have two screenshots to show you where to add the shortcode.

You have option to center when you create your style. Check the Align option.
Let me know if you still have troubles with it.
