That is an image, you will have to create an image yourself.

You can change it in “header settings” tab of theme options page. Dashboard->Appearance->Theme options

There is no requirement to offer free support, and in most cases its not possible either. You are free to use some other theme which fits your needs, you have thousand’s of options.

If you don’t like whats offered by my theme shop, you are free to find a theme shop that offers what you want.

Its not stored at all. Its discarded as html is not allowed in that form field.
