Thank you for the clarification of the goal you trying to achieve. We would very likely implement category-specific HFC support, but probably not before summer.
I would highly recommend you to add structured data markup dynamically by customizing the WooCommerce category template or by some specialized plugin for that, than to do it by hardcoding structured data through HFC.

On standard WordPress categories, we inject the global HEAD/BODY/FOOTER codes. There is no support for the category-specific HEAD/BODY/FOOTER codes.
We have not tested the Head & Footer Code on the WooCommerce product category.
Please let us know if you need a global-category and individual-category specific HEAD/FOOTER/CODE? That would require implementation (we had no request for that feature until now). Due to the current amount of work, we cannot provide an implementation ETA (a month or even more).

How do I define where the booking engine should appear? What did I do wrong where?
Please follow instructions you got from the provider:
The HTML placeholder must be stored in the desired area within the <body> tag (replace A-00000-0 with the respective partner ID):
<tbe param-pid="A-00000-0"><div class="tbe-loading"></div></tbe>So simply remove code snippet above from the Head & Footer Code field for BODY, and put it in page content where app has to be rendered.

Yes, you are right – the ‘replace’ behavior for the articles specific code work as you mentioned.
Just instead of empty script, you can use empty space character (which will be trimmed so no additional code will be added to HTML code anyway, or use empty HTML comment

Thank you for giving a chance to Head & Footer Code plugin (HFC).
Unfortunately, as it’s a security risk, HFC does not process PHP code if it’s entered into any plugin field (global or article specific).
Any content added to HFC fields is printed on the front-end as is.
