I’m not able to work with your local site, typically I would need a live site where the issue is replicable to do some digging.
For now, I started by spinning up a sandbox to see if I could get the same error you did, but so far I haven’t been able to replicate it. If you can send along some precise steps for me to follow, I can give this another look. I’ll need to know exactly what you are doing to see if I can get the same error to pop.
Outside of that, I have some best-guesses:
Issues like this one are often related to cache, Javascript minification/merging, or a conflict either between GiveWP and your theme or another plugin. One good place to look would be the optimizer plugin you are running. Glad you reached out. You are on the right track, those fields are coming in directly from the payment gateway, and GiveWP doesn’t have a way to make changes like the ones you are looking for. You may want to consider giving this a go using the 3.0 beta plugin on a test or staging site only, and then sharing some feedback there as well. This has been a feature request for other payment gateways, so your feedback there would be a great way to share what you’d like to be able to do.
Outside of that, your best bet will be to reach out to the payment gateway. Some folks have had success with various gateways from that side of things, but that depends based on the gateway.

First, send along your system information. You can do this by navigating to Donations > Tools > System Info (tab) and clicking the button to “Get System Report” and copy/paste that into your reply here.
I’ll also need the URL to your donation form.

And one of our top recommended tools (for free!!) is Loco Translate. It’s user friendly and allows you to make translations based on strings you can search: https://givewp.com/documentation/resources/translating-give/translating-givewp-with-loco-translate/. It’s a much easier solution than picking through the files, and doesn’t have any cost associated with it.

When I check your Donor Dashboard (I’ve popped in on it a handful of times since you mentioned the issue is sporadic), I’m always able to see it without an issue, everything looks great. Intermittent issues can definitely be tricky to track down because they aren’t consistent (it drives me bananas, too!). I would recommend keeping an eye here and if the issue becomes something reliably replicable send us a message and we can hop in for a look.
You are asking some really great “why’s” about Cloudflare’s behavior, and I’m not 100% certain about the answers to those. I know the steps to fix the trouble when I see it, and I could give you some best-guesses, but I suspect the answers to your questions would be best found with Cloudflare’s support team. I’d be very interested to hear what they say if you happen to reach out to them, and you are welcome to share that here if you’d like.

I know you mentioned implementing exclusions and disabling your CDN, but when I view the form I can see Cloudflare and Rocket Loader running, and they are working a little too aggressively here: https://imgur.com/lRm19TVRocket Loader can prevent GiveWP Multi-Step and Classic form templates and the Donor Dashboard from working because they load through an iframe.
Try disabling Rocket Loader in the Cloudflare settings to see if that fixes the issue.
That’s not a long terms solution because you want Rocket Loader for the rest of the site, so I have some tips that might help.
Cloudflare offers a way to exclude certain scripts from Rocket Loader: https://support.cloudflare.com/hc/en-us/articles/200168056-How-can-I-have-Rocket-Loader-ignore-specific-JavaScripts-
Unfortunately, those cannot be applied to our forms without custom coding.The next best option is to create a Page Rule: https://support.cloudflare.com/hc/en-us/articles/218411427
The page rule would look something like this:
yoursite.com/*?giveDonationFormInIframe=1
yoursite.com/*?give-embed=donor-dashboardThis way it will exclude all GiveWP forms.
If this doesn’t get you going, let’s try disabling those solutions so I can view the form without Rocket Loader and Cloudflare in the mix. That may help point me in the right direction.

Thanks for sending along those images. I’ve run another series of tests, but I just can’t replicate the issue you are seeing. In all my testing, the {receipt_id} tag populates a number. I’ve run this both through my own test site and several sandboxes, and that tag continues to function as expected: https://imgur.com/UO5R7fx
The Payment ID functions in a similar way, providing an id number for donors, although I know you were looking for something more detailed.
The issue has to be replicable in order for me to troubleshoot it, without that, I’m relatively stuck. Because I can’t move forward at the moment, I’ll need to mark this as resolved.
