I know how to enable stock management – my problem is understanding the best order of setting up my variables so I can turn off a specific size for a specific design.
I have a live site that we’ve used for a couple years – but the order of the process I set up isn’t allowing easy control of the stock management.
I set things up where they pick from one of 6 popcorn combos first – and then the tin, then the size, then the contents. It seems I should be setting things up in a different order – but am having a hard time understanding the best order to do this.

1) My issue is for only one variation of the product – not the entire product. If is say “out of stock” on the product (if that was possible – see below) it would turn off the entire products.

sometimes I run out of a specific “tin” (2nd dropdown). This is where my issue occurs. We have figured out a work-around solution – but unchecking the “enable” box – or setting the quantity amount for the variation to zero made no difference.
2) Your comment to change stock status to “out of stock” doesn’t appear on what I see in the edit product view:
