While inspecting your site, it seems you have added following CSS that is causing the problem.

Can you remove the above code and see if it resolves the issue?

So, if you can code on your own then, you can achieve the layout as you need for your site via the child theme. Hope you have got it.

By default, featured posts widget displays latest posts.

Can you provide us with URL to your site and screenshot of your posts section so that we can inspect it and give you a proper solution?

Go to your Dashboard > Appearance > Customize then Select Miscellaneous Settings and check Remove Featured Image From Single Post and click Publish and see if it resolves your issue?

Due to the difference in resolution of those devices: iPad(768px wide) and iPad Pro(1024px wide), the layout of the site is seen different in those devices. So, if you can code on your own then, you can achieve the layout as you need for your site via the child theme. Hope you have got it.

For your next question, you can add below code as custom css.

1. Go to your Dashboard > Pages > Add New then make new Portfolio Page and customize it as your choice and click Publish.

2. Go to Appearance > Menus and Choose Main Menu(Primary Menu) from Select a menu to edit option and choose Portfolio Page from Pages and Click Add to Menu and click Save Menu.
