Yes, It is possible to send PO Number. Please follow the below details:
Field Name: x_po_num
This optional field can contain the merchant-assigned purchase order number, up to 25
characters, no symbols. The purchase order number must be created dynamically on the
merchant server or provided per transaction. The payment gateway does not perform this
function.

Yes, there is no option to delete this. But you can delete it from code. Here is the file and code details:
File : wp-service-payment-form-with-authorizenet/functions.php
Line number: 696 to 700
Code: $fieldHtml .= ‘<option value=”VISA”>VISA</option>
<option value=”MasterCard”>MasterCard</option>
<option value=”AMEX”>AMEX</option>
<option value=”Discover”>Discover</option>’;

You need to remove <option value=”AMEX”>AMEX</option>
