For the free text field you decide the content by adjusting the label , eg. date of birth. But you have only one option. If you would like to ask for the age. then you could as ask for the name with the free text field and add the dropdown for the age range. Eg. below 5, 6, 7, 8, 9 , 10, below 14, older then 18.
The error message text can be changed within the options for the labels.
3) Yes, for now the information is not send automatically to the server. Is on the product backlog list. Maybe added with the next release.
4) Yes. The error message is displayed in case the user jumps directly to the checkout page and did not pass the cart. This is a challenge for me yet. Did not find yet how to add it. It is on the product backlog list.

You can set the option to not include your product description for a test, and/or you set the option to remove or mask HTML that might is not supported by the PDF library.
Please check also the order status setting. The default is to use only the completed status. You can adjust this in the options.

Yes, you can attach the PDF, Badge, QR code image and the all in one PDF to the woocommerce outgoing emails. This is part of the premium plugin.

The order ticket contains the public order ticket number, which will show all contained tickets.

Please check the amount of generated tickets. It is possible you reached the limit.
If you are a premium user the check the settings for the ticket number. Make it big, so that the system can create more unique ticket numbers.
21 letters are good. In 3 or 4 parts for readability – but not necessarily needed.
