We already have the Server Side Tagging feature live & it is built into our product, whereas, due to wordpress forums limitations, we are unable to provide you with additional information here.
And yes, we do offer delicate support for the Server Side tagging as well.

While we offer a free plan with a set of features, certain advanced functionalities such as using your own GTM are exclusive to our premium version. We appreciate your input and understand that this limitation may not align with your specific needs.
We encourage you to explore the additional features available in our premium version, which may better suit your needs.
Based on the WordPress guidelines, we cannot explain more about the premium features, here.

Glad to know that you like our Plugin. Yes, it is possible.
In the plugin Settings > Under Google Tag Manager Setup > You can disable the tracking for any “User Role” depending upon your requirement

I would request you try syncing your products by updating the plugin to the latest version, it should work as desired.
