A way to make the Quote text more vizible is to switch between Regular and Large styles. An alternative is the Pullquote block that can be better customized.
The block you’re mentioning is part of the default WordPress editor, it is not a limit added by the theme.

Not sure what to say, the lite version of ROP doesn’t come with the images feature, so I don’t think it has to do with our plugin.
Are you maybe using a different tool to generate the Twitter cards?
