What seems to have helped:

1. De- and Reactivating the iCalendar-Plugin
2. I decreased other WP-cron-events’ frequency using a plugin called WP-Crontrol. Maybe there were too many simultaneous cron-events.

I have been searching the logs for a while now and also checked the code with codesniffer: I couldn’t find any errors in the iCalendar plugin.

The manual synchronisation for each room also works when PHP8 is activated. It’s the 15-minutes-regularity / wp-cronjob which seems to have problems. There is no ?Starting Cron job? or ?Ending Cron job? written in the iCalendar log.

If I happen to find any error or possible explanation I will message you again. Thank you.

Did a rollback to PHP7.4 and checked the icalendar-logs some time later. It works perfectly again. So probably there is a PHP8-incompatibility somewhere.
Will search the server error logs as well, maybe there is some explanation.
