I may have been a tad hopeful about Google Drive. At first everything seemed to work but at least twice some oddities have occurred that make me wonder about the stability of this plugin.
1. it left 2 files over that should have been deleted
2. another time it left 1 file
3. a duplicate UpdraftPlus folder was created seemingly for no reason
At the moment all is okay again but please keep an eye open for things like this in case it also happens to you.
I find it somewhat odd that nobody from Updraft has responded to this ticket and have considered finding another backup solution.

I’m starting to suspect the issue might be with backups to Dropbox specifically. As an experiment, I switched to Google Drive.
My settings are to retain 3 daily backups, meaning on the 4th day the oldest backup should be deleted.
In Dropbox it only deleted 3 of the 5 files and as others reported it was causing issues.
In Google Drive, the oldest backup was correctly deleted, all files, as it is supposed to be.
Have only tested for 4 days now and will report back if the trend continues but I am suggesting that those who have posted here may want to try this for themselves.

Updraft is only deleting the database and plugins zipped files. The remaining 3 zipped files, Other, Uploads, Themes are not being deleted.
I have followed this for a few days now and confirm this is what happens at least in my situation.
Hopefully a fix can be found for this because meantime I have to manually delete the other files, which is certainly not ideal and also not what I would expect from the plugin.

Have followed this for 2 days now.
Updraft keeps the 3 backups, as I set it to.
But in Dropbox it only removes 2 of the 5 zipped files and 3 remain for each day not included in the 3 to keep.
Obviously, very soon these will pile up and I will run out of space.
Please provide a fix for this issue.

I set Updraft to backup daily and keep 3 copies. But, the 4th copy should have been deleted but was not. Instead 3 of 5 files remain. I have enough space in Dropbox so I know that is not the issue.

Any suggestions on how to fix?

thanks for the response. I am concerned that somehow the email was spoofed but I guess I will just need to look further into the matter from another angle.
By the way, I just want to say I absolutely love the plugin and always recommend it to people looking for a backup solution.
