As for showing the product categories instead of the products themselves, I currently don’t have an option for that. I am considering that for future versions.

Could you provide me with your website’s URL?
This error is related to Post Categories and Yoast’s Sitemap XML settings.
Do you have Yoast’s SEO Plugin currently installed?
If so, are you noindexing or not including any categories in your XML sitemap settings?

I did that on purpose, that is a feature / problem I am already aware of. When a search engine crawls the HTML sitemap it does not need multiple links to the same page. In doing this I am trying to keep the number of links on the sitemap page down. FYI Google recommend only having 100 or less links on a page.
I see that some webmasters might not want it to limit the number of times a post is linked.
In the future, I may add the option to not limit the number of links to a single post.

In Google Analytics it can sometimes take a day for certain data to appear. Please check again and see if your outbound links have been recorded.
Also to see the outbound link results:
In Google Analytics Reporting go to: “Behavior” -> “Events” -> “Overview” -> “Event Label”, here you will be able to see all of your website’s outbound links. (See Screenshots)

If you really wanted to, you could setup your outbound links as a Goal conversion.

Once the plugin is activated, assuming you have Google Analytics installed properly.
You can then view your outbound links in:
