Excellent question. No, it just says “GDPR accepted on:”. So for now, when creating the emails you should manually copy the GDPR text to the email template from the form itself. This should be fixed.

You should add the link above the checkbox item, not inside its text. You are generating the code anyway to the form so just change the code you generate. HTML is allowed in Contact Form 7 outside the form items.
