We have found the bug and it was indeed a conflict with that plugin. We use the same package as the WooCommerce EU VAT Assistant. This is a known problem in wordpress and it is called a dependency conflict.

We have fixed the issue and released a stable version of the new plugin.

There might be a conflict with a different plugin.
We have created a work around for the problem, which you can find here:

Could you try to install this version of the plugin and let us know if this has solved the issue?

Could you tell me which version of the plugin you are trying to install?
You need to make sure to use the last version of the plugin. (currently 1.0.6)
For debugging purposes, could you also tell us the wordpress version and php version?
