Normally invoice number is being generated by an accounts software like quickbooks etc – How Jigoshop should know what invoice number to assign?
We can create a plugin that will generate invoices on order completion, but we will need to understand the logic behind invoice numbers generation process.

It is normally a problem with wp_memory_limit and php limit..

Try to regenerate defaults:
Jigoshop –> Settings –> General –> Email details –> generate defaults
