As you can see here Subscriber is the default User Role for WordPress users. This can be a bit confusing, especially in the context of a membership plugin, but by default all new users are given the Subscriber user role.
Paid Member Subscriptions grants additional roles, on top of the Subscriber one, while users have valid subscriptions.

Did you check the Browser console like I suggested?
If no errors are listed there then the next step would be to perform a plugin conflict test.
In order to do so try to briefly deactivate all plugins except Profile Builder and check if the ‘Select capabilities’ field appears. Also, try temporarily switching the theme to a default one (such as Twenty Seventeen), and check for the issue again.
Can you set WP_DEBUG to true in wp-config.php to see if there are any error notices?
If the issue is gone, then try to find the conflicting plugin/theme by activating them back again one by one.

Did you try typing in the name of a capability in the ‘Select capabilities’ field? If you did and it still does not work please check your browser console when editing a role (by pressing the F12 key) to see if any error are listed.

Could you please perform a plugin conflict test?
To do so briefly disable all other plugins and enable the default Twenty Twenty theme. Please also disable all add-ons. If this fixes the problem re-enable everything one by one, checking each time to see when the problem returns.

You can use plugin like Profile Builder or Paid Member Subscriptions to add content restriction to each individual private page. PMS has an add-on that would allow you to do so as a general rule for all the pages, but it requires a Hobbyist or Pro license so I am not permitted to talk about it here.

Unfortunately that is not possible. There is a WooCommerce Sync add-on for Profile Builder that would allow you to do so, but since it requires a paid license for that plugin I am not permitted to discuss it here.

You can add the [client-portal] shortcode to a page of your website. When a logged in user visits that page they will be automatically redirected to their own private page.

For a user role to be able to see the private page for other users it needs to have the ‘delete_user’ capability.
As for the “logout – Username” text, you ca hide it using the CSS bellow:
