What happens if I update the theme? will the translations be lost or I would just have to sync them using loco translate sync button?

Hmm, I didn’t know that and never read that anywhere. Could you explain why? do I always need to translate the parent of any theme?

So I need to create a new menu for each language, I thought you create one and polylang creates all the translations automatically since it can take the translated pages link from the page translation.

What about my first question? why you disregard it?

WC Vendors creates the functionality to allow vendors to sell on your site, it has nothing to do with providing information to download or email.
I don’t think I understood completely what you are trying to do but I think WooCommerce would solve your issue.
