I’m hoping there is some kind of plug-in which would …like Blogger…allow me to just simply select text as I”m writing it and then set it’s color, size, full justify, etc.

Are you saying something as simple as that needs to be hand coded in text for a basic blog post???

oh, and how can the size of text in a post be changed? say for a caption centered under an image in a smaller font than the rest of the text in a post…?

My concern is that any theme other than the default WP annual updates will become obsolete after a few years, requiring extensive multi-day updates. I had hoped that by using code in a child theme it would be fairly straightforward to update the site year by year.

What does responsive behavior achieve?
