Hi @rbarron . Did you try set manual cron instead?
I am facing the same issue and it appear when I reach the limit of the available CPU usage.
I set manual cron from Cpanel and I disabled the WP_CRON in wp-config.php because it usually run each time you load any page. It helped me but I am still facing some errors when the manual cron runs. Currently I am trying to disable some cron jobs because when it reach the 100% of processing it start to get freezing and is not able to stop again. Basically I had to kill process by command line and it back to work well. PD: 512MB ram is enough to work well. Check healt of wordpress if it is recognizing this config.
