Yes, that’s possible. Some themes contain their own mini cart. In that case, I suggest reaching out to the theme developer to report the issue that you noticed.

You can contact the pre-sales support by going to https://woocommerce.com/contact-us/, then open the tab “I have a question about a specific extension or theme I’d like to purchase.” and then click the option “Can’t find an answer? Contact us!”.
oh, 1 question was how does it deal with out of stock items from the source store (Woocommerce).
i.e if out of stock at source, will the item end on the output channel eBay?

Thanks for reaching out. I was able to reproduce this issue and saw that this issue has already been reported on Gallery images don’t update when changing variations from the dropdown after selecting an image from the thumbnails first.

You need to remove that block and then add the Checkout block. On How to Use the WordPress Block Editor, you can find a tutorial on how to use the WordPress Block Editor, which is slightly different that Elementor.
