In the Dashboard go to Posts > Categories. This is where you add the categories for your posts.

When you write a new post you will notice a list of categories on the mid-right side of the page. Check the category you want to file the post under and publish. That should do the trick!

Its not clear if you’ve tried this yet or not, but, have you gone to the actual User Profile within WordPress and add the authors Google+ page there under Contact Info?

You will need to go to Appearance > Menu. Then in the upper righthand corner click on Screen Options and select CSS Classes. This will allow you to add a class to each item in your menu. And then you can use this post to figure out the rest.

I installed Yoast and it looks like that for me too. It looks like they did it on purpose as a graphical wink at SEO. (If you look at the code in Chrome, it shows the HTML codes for ‘<‘ symbols etc.)
