Usually it happens due to the out dated version of WooCommerce template that included in themes.
You can updated this template manually by replacing the file at
\wp-content\themes\<your-theme>\<woocommerce template folder>\single-product\add-to-cart\variable.php
with the latest file at
wp-content\plugins\woocommerce\templates\single-product\add-to-cart\variable.php

Yes, you can set availability rules.
Check at the bottom of the item editor, you can see option to add new rules

Hi, we are using https://flatpickr.js.org/ for datepicker.

We had a check for such calendar option in flatpicker, but it has no option to give two calendar for inline datepicker.

Showing two inline calendar for date ranges seems not a good idea as it occupying more screen space.
That’s why we made it a single calendar with range selection, it is a also very user friendly

Now it can set only hourly and daily bookings.

We have updated it now. Appoligise as we didn’t able to make it in last week.

In the new version, it can enable the quantity field as well for an item.
The option can see at the right hand side block of the item edit page.
