Discovered the issue was Elementor Pro (which I have), I needed to go to the Elementor Settings and under integrations set “Mini Cart Template” to disabled.

For example changing [products limit=”4″ best_selling=”true” order=”DESC” columns=”4″]
to [products limit=”8″ best_selling=”true” order=”DESC” columns=”8″]
will display 8 products in 8 columns in one row.

Reviewing further this only seems to be happening when a variable product is added to the cart.
