I tried that, and it works as it should in the TwentySixteen theme. So, it would seem it is an issue with our theme.
When I inspect with the web dev tools in firefox it shows this:

Even though we have the category color in the plugin set to: #a7141d
Unsure if this helps at all, but it seems to be calling out this part superficially: article.tribe-events-calendar-month__multiday-event.tribe_events_cat-vtr h3 in the above code.
