And then it alerts them when I add a variable with a specific date (I would like to add variables as I know the dates). is that possible?

Ok, I could observe that it works when someone signs up on the waiting list for a particular variable.
However, I have a product with no variables added and no stock. And I want to be able to keep adding variables (in this case, they are available dates for an event) and be notified that a new variable is available.
Is this possible?
