I have a lot of products…

It removes the variation product, but if you only have a variable product on cart it expires your session. At least, is what the error says. If you go back to the shop after that, all product variations are non purchasable, but if you delete your session, or logout and login, it goes back to normal…

I have a website that has the exact same product database and the exact same pricing zones, and it doesn’t happen.

That’s happening because your session expired. When you get session expired, you stop having a country, and there are no products for you to buy.

Try to open it on an incognito tab, and you should have all the products back.

All my prices for variations are set manually by the way.

I’ve tried disabling conditional-shipping but the problem is still there.
Also, all of my products are variable products, and all of them have price. Just checked that, so i don’t believe it is related to the price field.

I enabled it (geolocation feature), but the problem is still there.
