While discussing with the developer to make an eStory GDPR complaint, I got to know from them that eStory is already compliant with GDPR.

Since eStory is an FSE theme, we’ve not used any features that would go against GDPR. WordPress itself is GDPR compliant, and we’ve followed its guidelines. For example, we’ve loaded a font family locally (not using Google URL).

If you want to remove Breadcrumbs from a Single post, please refer to below-given documentation link which will help you to remove Breadcrumbs from a single post:

Also, if you want to remove the Meta Tags, please go to Appearance > Customize > Content > Single Posts under Single Post Content Order and click on the Eye Icon, which will hide the content in the display window, as shown in the screenshot below.

Actually, this is not related to the theme. So, once you clear your site’s cache, it might remove all cookies comes from the plugin you added earlier.
