I haven’t fixed the JavaScript error yet, but changing the tracking method from Universal Analytics to Global Site Tag fixed the problem and GA is now successfully collecting data from my site.
For anybody else who encounters the same problem, I suggest you do this first.

Would your preferred email client not be the best option for sending emails manually to your contacts?
It would but I need to use templates with images, buttons and some other advanced formatting which Gmail doesn’t allow. These emails will also be transactional, so being able to use a service that can auto-populate the subject and body with order numbers, customer names etc. would be great. I’ve found a few ways do this already but none of them are particularly easy and because I will be sending so many emails per day, I need something very simple. If you have any recommendations for me I would appreciate it.

This free plugin doesn’t seem to work very well with Divi because you will never be able to edit how the payment button looks, it will always be this ugly. For that reason, I recommend you use the “Stripe Payments for WordPress – WP Simple Pay” plugin instead. Here’s a link to a guide how to install it in Divi:

However, I tried pasting it at different positions on my website and its looks are not changing. Is there anything I can do about that, or is that just an issue of the theme that I am using?
