I’m new to wordpess as well but I think you can do the following:
1) Correcting the “f”, go to your dashboard, and under Posts, click on Categories. You should see a window with the list of your categories. If you run your mouse over the category listed, an edit option should show up. Clicking on that takes you to another window where you can make the correction.
2) To arrange the order of categories in your drop down menu, you’ll have to go to the Appearance, Menus section. A box showing your categories should show up and you can drag and drop to the order you want.

I’m having the same problem with the recent posts that I’ve published (only my first post shows up) and the other two can’t be found in their categories. I’ve tried doing as you suggested with the Settings>Permalinks but it still doesn’t work. E.g. I’ve writing a post on a Japan trip but can’t be found in my Travel-AsiaPac-Japan category. My website is https://www.gazeandgraze.com. Any other solutions I could try?
