The most recent version of the plugin, released this week (1.2.3) includes a bugfix for invalid Unicode character sequences. Can you try again using the latest version and let us know if you are still seeing the issue?

Image content is stripped from H2s, which yields an empty heading, which violates Apple News Format standards. You should be able to check this in the Text tab in the editor.

The core functionality of the plugin will not look at custom fields, only at core WordPress fields. If you would like to inject the video content into the generated JSON from a custom field, you can use either the apple_news_exporter_content_pre or apple_news_exporter_content filter: https://github.com/alleyinteractive/apple-news/wiki/action-and-filter-hooks#adminapple-actionsindexclass-exportphp-1
