I’ve found that if you clear the transients as in some of your other support posts, the issue seeems to get fixed. However, if you carry out two transactions from the same browser, the first with a UK billing address (£) then a US one ($), the issue returns.
The issue seems to remain in the woocommerce report graphs, where it shows the total sales, disregarding the differences in currency. So even though we may have had 300$ in sales, it shows as 300£.
