Just an update, I’ve realized this error is caused by simple products and not the stock status. Variable products are fine, it’s only when a simple product enters the picture that the error is created.

Yes – it’s only when the discount rules plugin is activated and it is the latest version. I’ve deactivated it and the issue goes away.
