I’m not sure what other context might be helpful… the CRM we’re connecting to is Sage CRM. This API does not use authorization headers, and it does not provide a response.

I don’t think it protects the checkout form, but if you don’t have free products, that form should be fairly well protected just by the fact that it costs money to checkout. Contact Form 7’s recaptcha integration also seems to protect many forms besides its own.
2.2.3 resolved the issue for me across all devices and browsers. Great resolution speed, thanks a million.
@federicama, did you try clearing the device cache on your mobile? For example, on an iPhone this is under Settings > Safari > Clear History and Website Data
My guess is that you have some old jQuery stuck in your device’s cache.

I am having the same experience on multiple sites, all running WP 5.5.1. The issue persists with all plugins off (except for CF7 and RfCF7). It persists across theme changes.
When the redirect fails, it is due to a jQuery error. “$ is not a function” – which comes from the file wpcf7-redirect-frontend-script.js in the build folder. When I search/replace “$” with “jQuery” and re-upload this file, the issue resolves. It appears that noconflict mode is not properly being worked around.

Just a suggestion: In my opinion, the ideal UX would be the following:
If a product does not have min or max requirements set – continue to show “Add to Cart”.
If it does have a min and/or max, have the Add to Cart button/link change to a product link with Select Options (or whatever text) – similar to how those buttons change when it’s a simple product vs. a variable product.
