This issue is related to any change you make in Gutenberg with Spectra tools I mentioned. Maybe it only appears in LightSpeed Web Server environment. It is hard to tell because I do not have other installations to check.

The EU server has different address. It looks like that Mailgun themselves didn’t realise that consecuence because in domain setting for EU subdomains there is still original API Base URL address stated for US based server.

I created another support thread where I am asking the plugin developer to adjust it accordingly as well.

However if you use SMTP with the new server it will work out as always.
