the best way to export data for moving is to create a SQL contents of table wp_statpress via phpmyadmin and then recreate it in the new host.
With this you preserve the data.

Could you go into newstatpress utility and see how big is your database?

you have to export the wp_statpress table and import it in new database.

You had to check the tool your service provider gives to you for DB manipulation (common is phpMyAdmin) and use the export/import table function.

The option of newstatpress should be recreated by hand into the new installation as it is quite complicated to export it from wordpress option table.

I think that the solution is to use “Crypt IP addresses” and you are CGPR compliant because there is no a decrypt function possible on collected data.

About getting clear IP address collected without consensus this is a open question as IP could be shared from users by his service data provider, so only fixed registered IP address correspond to one real user.

This means that you cannot implement easy a function that ask the user for consensus as data collected is by IP, not by a way to know him directly.
You could know a user if you set a persistent cookie into his computer or force him to register and login as WordPress user into your site.

all data is stored into the DB where the WordPress is installed and are not send to external server at all.

Please take present that this is already true even without GDPR normative as Worpress plugin guideline prohibit to send data to external server unless user make explicit consensus for that by enable it.
Code that send data to external server without this option are removed from the Worpress repository by plugin reviewers.

there is the utility for repair table into the NewStatpress option that solve this cases if you don’t have access to phpmyadmin.

I use Wordfence in all sites with NewStatpress, so it gives no problem.

Did you get result in Overview and/or Dashboard from Newstatpress?

Could you try to add those variables in widget:
* %since% – Date of the first hit
* %os% – Operative system
* %browser% – Browser
* %ip% – IP address

and see if them works (then you can remove them).

Are you using some caching plugin?
