which version of the plugin are you using?

can you please send the site info details or if you’re seeing anything in the error log when debugging?

Considering the debugging process in WordPress

are you able to provide the stack trace in the debug log from the error you’re seeing?

setting the wordpress time zone to a text one like America/Santiago worked for me.
i think the problem is the UTC-number format.

the only way i can see the mail notifications is resending them from the order backend
