SOLVED:
Garret L. and their team did great detective work and fixed the issue. Here’s the culprit if anyone else ends up in this predicament.
“Our developer found that this comes from a theme setting. We fixed this by going to Appearance > Customize > Theme Settings > Content Archives and changing the Featured Image Size option to medium_large.”
Site uses Genesis with the Divine Theme.

Since all the other previously posted Listings were also “Free” Plans and still showing up on the front-end, I was hesitant to change anything that might make them all wig out.
Now able to set the Plan on the individual listings again. Not sure why it would have been disabled, but happy we can highlight that member properly now.
