I found a plugin called “Content Views” that wound up solving my issue… it allows you to create a new page and then populate it with posts by category (and some other filters).

…ah, I see it and it works. My console for the plugin renders a bit strange in my browser so I’d missed it. Well done.

…btw, if there’s a plugin that has this functionality, that’d be fantastic as well.
