The “Email Post Changes” works very well, and shows “diffs” in the emails it sends out to boot. Nice job.

Ok – looks like I found what I was looking for with the “Email Post Changes” plugin. It will notify via email on edit for both PAGES and POSTS, and it includes the before/after text in the messages it sends. In the plugin you can select exactly which of the Users get the emails (one, two, all, or none) and also specify additional email addresses to be notified.
