There may be a conflict with another plugin. Could you do a test by deactivating plugins, and leaving only WooCommerce and the PreOrder plugin? It would also be good if you do a test by changing the site theme to a standard WordPress one.
If the issue continues, could you share a screenshot with the Pre-Order product settings?

I did a test with the plugin and an endless subscription product, and the expiration time does not appear.
Could you do a test on your site, disabling other plugins to see if there are any other plugins that are in conflict?

recurring payments are only possible with PayPal Standard, the Stripe payment method is not supported in the free version of the plugin

It is possible cancel these subscriptions from your PayPal dashboard.
It seems that there is some communication issue between your site and the PayPal platform. You should check the IPN setting according to this guide

It is only possible to make payments with PayPal Standard, perhaps you are using a payment method that is not compatible.

To enable and disable plugins, the user must have that capability.
By default, the activate_plugins permission is only given to Super Admins, and Administrators. There are plugins to edit the capabilities of any WordPress role, including the Shop Manager.

The Pre-Order plugin does not add a button, it just changes the text and functionality to the WooCommerce Add to Cart button.
If your theme or another plugin adds another button, it is not related to the Pre-Order plugin.
