Ok, I figured it out by myself (or nearby) ??
My problem comes from Gutenberg.
In classic mode, jetpack tiled galleries work like a charm (except that it breaks my layout…)
Because it broke my layout since I updated to wp5, I replaced the gallery from the Classic to the gtbg bloc gallery on the page mentionned on my 1st post.
That’s when I identified this bug/non-implementation with the caption.
I found the track on this post on wp.org forum:
Are tiled galleries supported in Gutenberg?
Now perhaps I shall rename my topic on this forum or create a new one?

Thank you for the reply.
I can add caption to any image in backoffice, no problem :
But when i publish the Mosaic gallery, nothing appears on front, not even in the code:
But with the default wp (gtbg) gallery I can add a caption
(another 1 ?!? pb with gtbg not jetpack):And it appears on Front:
I thought it was possible with square tiled gallery but i can’t do it neither. Is it possible to display figcaption on jetpack tiled gallery on front ?

Thank you for your answer but i can’t find any caption, even in the code of the online Mosaic gallery.
I know this is possible with the square thumb gallery but not in the mosaic.
Where shall i look for the function to override to be able to achieve this?
