Several bugs have not been detected during the BETA testing and the QA process.
Following the release, several patches have been sent quickly to fix most of the issues.
Moreover, some addons for Elementor were not compatible with the new version of Elementor when it was released.
We commit ourselves to improve the QA process in the future and better prepare you and the other users to the upcoming major updates.
Here is a list of the fixes sent to Elementor. Elementor 3.0.5 is the latest version of Elementor, and we will hopefully fix everything with the upcoming version that we are already preparing.

In this case, follow the “update issues” guide, and feel free to send screenshots of the problems and a link to the page.It sounds like caching issues. Some users do not experience these issues, others like you suffer from them.
Make sure you are using the latest version of Elementor 3.0.5.
Then, check if the “regenerate CSS” tool helps. You can also switch the CSS print method and verify if it fixes the issue temporarily.
Check if you can fix the issue by saving the page again. If this is the case, then the issue might be due to your server cache.

This option is disabled for upgraded websites.
The option is active by default for fresh installs.
Go to Elementor > Settings > Advanced tab > Improved DOM Optimization
and check the status.

Regarding your issue with the classes that came back, it can help if you share one of the pages with the issue, and more information about the environment of this site (exact Elementor versions used, server cache used, etc.)
In short, there is a legacy mode that calls back the classes, but this should not happen if the “improved dom optimization” option is disabled.Also, the plugin cache is only one cache that affects the websites. The browser cache and the server cache also affect the websites.
